As the temperatures soar, nothing feels quite as refreshing as a summer Popsicle. The perfect mixture of sugar, ice and fun, these bite sized treats can be tonnes of fun to make and enjoy with friends. Here are a few easy breezy popsicles to try making at home.


Strawberry & Yoghurt

Blend together the following ingredients

1 cup fresh strawberries, roughly chopped
1/4 cup sugar
1 teaspoon lemon juice
1 cup Greek yogurt

Mix some of the strawberries with the sugar until a soft mixture forms. Add the mixture to the remaining strawberries and the lemon juice and mix in a blender to form a smooth puree. Pour the mixture into a mold. Bananas or mangoes are equally delicious and nutritious substitutes.

Grapefruit & Vodka

Mix together the juice of one grapefruit, 12 strawberries and 150 ml of Vodka in a blender.  Pour the mixture in to a mold and freeze for at least 6 hours. This is a great alternative to cocktail a for your next picnic with the girls!

Cookies and Cream

In a bowl crush a packet of Oreo cookies, the star ingredient of this popsicle. Next add half a cup of fine sugar and a quarter cup of water until the sugar completely dissolves. Stir in half a cup of Sour cream, quarter cup of milk, one cup of cream and a teaspoon of vanilla extract. Mix in the crushed cookies and stir well.

Freeze in a mold for 4 hours.

Strawberry Cheesecake

Everyone loves cake, and this strawberry cheesecake popsicle is guaranteed to take your dessert game to another level.

In a blender mix together 250 ml of cream cheese, quarter cup of sour cream, a cup of sugar and half a cup of whole milk. Mix until smooth and add 6 large strawberries, mix again.

Pour into popsicle mould, making sure to leave an inch empty at the top for the crust.

Use 6 finely crushed biscuits for the base, mix in butter until the mixture is slightly wet. Press down this mixture into each popsicle’s end to make the base.

Freeze for 6 hours.
